SQUAPPLE CRISP

Locally Grown Recipes for "Not your Average Lunch Lady"
4 cups winter squash, peeled, seeded, and diced
1 pound (about 3) apples, peeled and sliced
4 Tbs. butter
1/2 cup Maple Syrup
1/8 tsp nutmeg
1/4 tsp cinnamon
1 cup nature's path flax flakes, crushed
 
Roast squash until tender. Mash with 1 Tbs. butter, 1/4 cup Maple Syrup, and spices. Melt remaining butter, mix with
cornflakes and remaining syrup. Layer squash and apples in baking pan, top with flax flake mixture. Bake at 350° for
15-20 minutes or until bubbling. Serve hot alone as a side dish or with a scoop of local vanilla ice cream

 

History of Squapple Crisp

 

Chef Timothy Cipriano, Linda Biedrycki and Elizabeth Fleming started a pilot program at Dodd Middle School in Cheshire, CT with one 8th grade class and the Dodd Kitchen.  Chef Tim developed several recipes and submitted them to Mrs. Biedrycki who chose four of the recipes to be used by her class.  Over the course of four weeks the students did a financial and nutritional analysis on the recipes and prepared them in their classroom kitchen.  After taste testing the finished product the students marketed the product to the school community.  The following Friday Chef Tim and Ms. Fleming would provide samples of the dish to the Dodd school community.   The reception received from the school was so overwhelming we decided to incorporate the dishes into our regular menu.

Our most popular dish was a Winter Squash and Apple Crisp topped with a crunchy cornflake topping.  The Consumer Science students took a liking to the dish so much that they named it “Squapple Crisp”.  All the produce used for this program was grown in CT and procured through the CT Farm-to-School Program. 

Chef Tim has been invited to serve Squapple at the CT State Capitol for the Working Lands Alliance (WLA) Annual Meeting.  WLA is a Farmland Preservation Coalition.  Squapple has been very well received and has since been featured in numerous magazines, newspapers, and state publications. Recently it is a featured recipe in the New Haven Community Cookbook, offered for sale at www.cityseed.org
